docs: improve "use case suitability" section

Is a "❌" for "App development" on mainnet the correct stance? There are known bugs on Mainnet Alpha v4 (as publicised in Aztec blog posts), so it's important to not encourage app deployments that could be exploited. But I understand development of certain apps can continue, especially if they implement their own training wheels. Perhaps the section needs some more nuance so as not to detract careful builders.

That change (of deleting the section) makes sense as long as there is somewhere in the docs that talks about the security risks of developing and deploying on Alpha.
